FOOD and FLAVOR; A GASTRONOMIC GUIDE TO HEALTH AND GOOD LIVING

London: JOHN LANE, 1914. Hardcover. 594 pages. 21 x 15 cm. A wide-ranging study of culinary practice and food quality that argues flavor is CENTRAL to good eating and to health - all written at the turn of the century. Finck compares the often uninspiring state of American food with the gastronomic traditions of Europe, and he makes a lively case for reform in how Americans grow, prepare, and enjoy their food. The author, Henry Theophilus Finck, was an American music critic and writer, described as one of "the most prolific and influential critics of his day." He brought the same close attention and strong opinions to the table he brought to the concert hall. The illustrations are by Charles Shepard Chapman, an American painter perhaps best remembered for his Grand Canyon landscape at the American Museum of Natural History. Signed on the front free end paper by previous owner. Covers heavily rubbed, spine heavily sunned. Interior clean and crisp. Maroon close covered boards, gilt title. Good. Item #5124
