[CANDY] [CULINARY MANUSCRIPT] Handwritten and Pictorial Candy Business Ledger; PETER KERN'S CONFECTIONER and CANDY MANUFACTURER
Knoxville, Tennessee: 1900-1905. 176 pages. 19 x 11.5 cm. At the turn of the twentieth century, in Knoxville, Tennessee, a German-born confectioner named Peter Kern carefully documented the inner workings of his thriving candy business. Between 1900 and 1905, a 176-page ledger was compiled within Peter Kern's confectionery business - possibly written by Kern himself, or by one of his employees - and filled with recipes, technical notes, supplier lists, and detailed illustrations.
Born in Germany in 1835, Kern immigrated to New York in the early 1850s, trained as a shoemaker, and gradually made his way south. By 1857 he had settled in Georgia and enlisted with the 12th Georgia Infantry during the Civil War. Wounded in Virginia and detained in Knoxville, he eventually found release and opportunity. With fellow German immigrant William Heidel, Kern opened a modest bakery serving Union soldiers. Within a decade he had bought out Heidel's share and moved the venture to Market Square, where it blossomed into a bakery, ice cream parlor, and full confectionery - a cornerstone of Knoxville's civic life and the foundation for what would later become Kern's Bakery.
This ledger, written near the end of Kern's life, distills half a century of experience into a single bound volume. It reads as both a manual and business formula : from candy box dimensions and ribbon suppliers to the color of caramel and the design of chocolate coatings. Whitney & Co. in Massachusetts supplied boxes; White & Graham of New York provided imported ribbons; A. G. Elliot & Co. of Philadelphia furnished celluloid paper for transparent wrappers; E. Faber in New York delivered rubber bands - (just a small snippet of the businesses listed). Each page builds a network of trade and craft that sustained an early American sweets business.
Recipes and illustrations appear throughout - Chocolate Roman Filberts priced at seventy-five cents per pound, assorted caramels flavored with vanilla, lemon, orange, raspberry, almond, maple, and black walnut, etc. (full page), even a nineteenth-century formula for cough drops traced to an 1894 journal entry. The ledger pays close attention to competitors, too: pages devoted to the exact wrapping of Hershey's and Whitman's chocolates include scaled diagrams and material notes. Toward the closing leaves, elaborate drawings capture the forms of bonbons, taffies, and nougats, complemented by schematics for "Fancy Dipping techniques - illustrations of texture and precision.
Every detail in Kern's account attests to the discipline of a craftsman who treated confectionery as science and art in equal measure. In an era before computers or automated machinery, a single handwritten book served as the blueprint of a business - a testament to a meticulous American enterprise.
