During the 1940s–50s, this area was largely home to European immigrant families—primarily Polish, Russian Jewish, German, and Scandinavian—whose children were often taught “American” customs through domestic education.
Bertha Cohen’s notebook begins with fundamental topics: Cooking Materials, Necessary Articles, Dishwashing, and general Rules of the Kitchen. Lessons advance from simple preparations to more complex recipes. One page features a hand-drawn diagram of a cow, identifying its different parts. The final sections cover household utensils and proper table setting. Covers well worn and rubbed from use. Hinges cracked but holding. Gray cloth covered boards. Good. Item #4713
