Marcel Boulestin (1878-1943) was a pioneering French chef who played a significant role in popularizing French cuisine in the English-speaking world. His writings were characterized by an approachable tone, emphasizing simplicity and practicality in cooking. Here in The Evening Standard Book of Menus, he does just that - discussing "The Value of Simplicity" and the importance of "Using Everything Well". We know his conversational style of writing inspired Elizabeth David, who praised Boulestin in her books and adopted many of his principles. Laid in: Two handwritten notes, one in David's hand and the other, possibly in Leyel's hand. Written above David's Bookplate - From the Leyel's library, sold at Sotheby's 15-4-58. Leyel refers to the author and founder of the Society of Herbalists, Hilda Leyel, who wrote under the name Mrs. C. F. Leyel. Leyel's important and extensive library, with many volumes dating back to the 16th and 17th centuries, was dispersed by a sale at Sotheby's in 1958.
