Item #4173 Chinese-Japanese Cook Book. Sara Bosse, Onoto Watanna.

Chinese-Japanese Cook Book

Chicago: Rand McNally & Company, 1914. First Edition. Hardcover. 120 pages. 16.5 x 10 cm. An early "oriental" cookbook with a wide variety of recipes for some fairly authentic unknown (at the time) recipes. Sara (Eaton) Bosse and Onoto Watanna (Winnifred Eaton) were sisters of Chinese/English heritage. Exploiting the public's passion for everything "Japonica" helped obscure their Chinese heritage at the time of anti-Chinese views and political policies. The first Chapter highlights Chinese recipes: Rules for Cooking, Soups, Gravy, Fish, Poultry & Game, Meats, Chop Sueys, Chow Mains, Fried Rice, Omelettes, Vegetables, and Cakes. The second Chapter highlights Japanese recipes: Soups, Fish, Poultry & Game, Omelettes & Custards, Vegetables and Relishes, Cakes/Candies/Sweetmeats, Bean Sprouts & Beverages, and a List of Chinese And Japanese Groceries. Interior clean and crisp. Covers heavily rubbed. [BROWN 809]. Maroon cloth covered boards with pictorial paper label. Good. Item #4173
