After the 1965 Immigration and Nationality Act removed restrictions against non-white, non-European immigrants to the U.S., opening the doors to people from the East and South Asia - authentic Indian cuisine was on the radar and American cooks needed guidance. Surjeet Malhan took the challenge and introduced over one hundred dishes in this simple to follow, early Indian cookbook. Light staining to the interior.
