William McKinney notes: "In sweet memories of a happy childhood spent in the atmosphere of the plantations and cabins of Virginia under the benign influence of my Dear Old Southern Mammy, Aunt Caroline, this volume is affectionately dedicated." With recipes named: Pickaninny Cookies, Mason and Dixon Cookies, Mammy's Candied Sweet Potatoes, Stonewall Jackson Pudding, Aunt Jemima's Lemon Pie, Jeff. Davis Muffins, Johnny Reb Cake, and Uncle Remus Mint Julep, it is hard not to recoil at the blatant racism that was employed while preparing this cookbook. Toni Tipton Martin notes in her Bibliography - "The book represents a good example of culinary segregation. By that, I mean that the McKinneys attributed specific formulas to the cook, mammy, or other 'aunt' or 'uncle.' These dishes, with rare exception, limited Caroline's repertoire to narrowly defined ethnic recipes made from poverty ingredients." An added bonus - four pages of handwritten recipes for Brownies, Pineapple or Peach Upside Down Cake, Chocolate Bread Pudding, and Electric Sherbets.
