The author, Auguste Colombié was a chef, journalist, historian, but most important, a teacher who campaigned for the free cooking/homemaking education for young girls, women, and soldiers. He believed and promoted the instruction of hygiene and hygienic cooking, an unconventional idea at the time. Colombié was the cofounder of Adadémie de Cuisine and later founded a cooking school specifically for female audiences from which this book was composed. From the culinary collection of Carl G.
