(32 pages, 12.5 x 16.5 cm) A corporate cookbook from The Borden Company, advertising their St. Charles brand evaporated milk with recipes from “every part of the country” and “by leading food experts”. It opens with a brief introduction about Gail Borden, the original founder of the company who became concerned with milk’s purity after being on a ship where a fatal disease spread from the cows aboard to the children who drank their milk. He invented evaporated milk using a process of condensing milk by vacuum to ensure the preservation of milk without refrigeration. The book features color illustrations of many of the dishes, and two full pages of color illustrated in the center of the book. All dishes are notably proportioned for six people.
