Carême, who referred to himself in a princely manner, as the 'chef of kings and king of chefs' - made his mark early by creating classic architectural forms in sugar and pastry. This, his first book, is a manual and treatise divided into two volumes comprising of sweet and savory recipes along with over 60 illustrated line drawings depicting the most elaborate dishes.
