Heath attempted to create recipes that helped support calorie and vitamin needs while fashioning appetizing dishes. This book was not intended to be a representation of American cooking but a selection of American dishes "of a simple and economical nature - to bring a little novelty and pleasure to the British Housewife during the wartime." Ambrose Heath was the pen name of the journalist Gerald Miller (1891-1969), writing cookery columns for a number of newspapers including the Morning Chronicle and the Manchester Guardian.
