This manual was one of the first French Cookbooks to focus regional cuisine - including the North and the South, with guides for the best versions of a variety of foods. Chef Durand was a well known gastronomer during the 1800's who owned a restaurant in Nimes, France. Includes a fold-out guide to dinner service. Text in French. Some minor foxing and dust-soiling, covers are slightly worn on edges. Half-leather with marbled paste paper. Very Good. Item #3205
