Bologna: per il Longhi, 1693. Second Edition. Hardcover. (4) 544 pages. 14.5 x 8 cm. In three sections, continuously paginated - conforming to the four seasons of the year. Originally published in 1651, in French, this cookbook was a hit in Italy - enormously influential all around Europe. La Varenne is regarded as the founding father of modern, French cooking with his departure from the earlier style of heavily spice cooking to one that was based on natural flavors. Book plate of Dr. Georg Freund on paste-down endpaper. Owner's handwriting, crossed out, on half title page, as well as Drexel stamp and blue colored marker. A Berlin library stamp, in red, on title page. Clean copy, with small closed tear (repaired) to page 329. Half bound vellum with marbled boards. Very good. Item #2910
